Botanical name: Humulus
Hops refer to the cone-shaped flowers, or “inflorescence,” of the Humulus lupulus plant. This climbing perennial holds a special allure for craft brewers. Concealed within each cone are minuscule yellow pods or glands known as lupulin, serving as the wellspring of bitterness, aroma, and flavor in beer.
