Lycopene, a lipophilic carotenoid hydrocarbon pigment, is present in red, pink, and orange fruits and vegetables, including tomatoes, apricots, melons, papayas, grapes, peaches, watermelons, and cranberries. The extraction of lycopene could serve as a food-grade source of carotenoids.
